Three-Ingredient Healthy Pancakes

My sister gave me this recipe and it's become quite a hit in the Schuller/Trevathan household! Pancakes have always been a favorite breakfast staple of mine, and I love that these are healthier than the traditional option. It's always good to have food options that are hearty and delicious, but also guilt-free. You won't believe how scrumptious these super-simple little treats are until you try them for yourself. :)

Speaking of my sister-- she officially committed to UCLA for fall of 2014!! I know I wrote a post dedicated to her UF acceptance, but she got into lots of other respected colleges after that, too. I am so excited for her and proud of all her hard work!

Now back to the pancakes...

Ingredients:
  • 4 bananas 
  • 4 eggs
  • 3 tbsp white flour
Instructions:
  • Mash bananas in a mixing bowl
  • Stir in eggs
  • Beat in flour using whisk or fork
  • Fry like you would a normal pancake! I use coconut oil on medium heat.
  • Serve with mixed berries, maple syrup, and vanilla greek yogurt.
Notes: If you want to be super health-conscious, you can leave the flour out. It still works; in fact, the original recipe from my sister was just bananas and eggs. I like to thicken mine though! The amount listed above feeds 2 people.
